This is my favourite Gut Feelings meal bar none. It is so fulfilling on so many levels. Pasta is such a guilty pleasure but in the right quantity without meat and dairy, you can enjoy it without the guilt that usually follows. The other surprise is how tasty this dish is. The sliced black olives provide a lot of flavour, the tofu cubes are a lovely comfort bite. My secret, since having lived in Italy, is to cook it 4 minutes rather than 5 in the micro, to avoid getting a mushy pasta. Voila!
